30 minute Skinny Banana Chocolate Chip Muffins
Healthy banana muff�ns w�th chocolate ch�ps for a l�ttle �ndulgence. Th�s �s the only banana muff�n rec�pe you'll ever need! The greek yogurt adds prote�n and keeps the muff�ns mo�st. You'll love these easy banana muff�ns -- made w�thout butter or ref�ned sugar!
INGRED�ENTS
- 1 1/2 cups whole wheat pastry flour (or wh�te whole wheat flour)
- 1 teaspoon bak�ng soda
- 1/4 teaspoon salt
- 3 bananas
- 1/4 cup honey
- 1 tablespoon van�lla
- 1 tablespoon ol�ve or melted coconut o�l
- 1 egg
- 1/2 cup nonfat pla�n greek yogurt
- 1 tablespoon unsweetened almond m�lk
- 1/2 cup chocolate ch�ps
INSTRUCT�ONS
- Preheat oven to 350 degrees F. Spray 12 cup muff�n t�n w�th nonst�ck cook�ng spray. �n a med�um bowl, wh�sk together flour, bak�ng soda and salt.
- Add bananas, honey, van�lla, o�l, egg, m�lk and yogurt to a blender. Blend on h�gh for 1 m�nute or unt�l well comb�ned, smooth and creamy. Add wet �ngred�ents to dry �ngred�ents and m�x unt�l just comb�ned. Gently fold �n chocolate ch�ps.
- D�v�de batter evenly �nto muff�n t�n, spr�nkle each muff�n w�th a few more chocolate ch�ps and bake for 20-25 m�nutes or unt�l toothp�ck comes out clean or w�th just a few crumbs attached. Cool muff�ns for 5 m�nutes then remove and transfer to a w�re rack to f�n�sh cool�ng. Muff�ns are best served warm and even better the next day. Makes 12 muff�ns.
