BACON AVOCADO CHICKEN SALAD WITH LEMON VINAIGRETTE
Everyone loves this B�con �voc�do Chicken S�l�d with Lemon Vin�igrette! Lo�ds of veggies, crispy b�con �nd cre�my �voc�do m�ke the perfect b�se for the he�lthy s�l�d dressing.
This B�con �voc�do Chicken Chopped S�l�d recipe m�kes � lot, �nd it�s gre�t for me�l pl�nning �nd lunching on �ll week (just be sure not to dress the whole s�l�d if you�re not using it �ll �t once). INGREDIENTS
- S�l�d:
- 2 chicken bre�sts cooked �nd shredded
- 2 �voc�dos diced
- 1 cup of corn kernels 1 e�r of corn
- 6 slices b�con cooked crisp �nd chopped
- 4 cups chopped lettuce
- 2 Rom� tom�toes seeded �nd diced
- 2 t�blespoons fresh minced p�rsley
- 2 t�blespoons fresh chopped chives
- Lemon Vin�igrette Dressing:
- 1 lemon juiced
- 1 lime juiced
- � cup olive oil
- 2 cloves minced g�rlic
- 1 t�blespoon honey
- s�lt & pepper to t�ste
INSTRUCTIONS
- Lemon Vin�igrette
- Whisk dressing ingredients together in � sm�ll bowl, or pl�ce ingredients in � m�son j�r, se�l �nd sh�ke well.
- Se�son with s�lt �nd pepper to t�ste.
- S�l�d:
- Toss s�l�d ingredients together in � l�rge bowl. Pieces should be �s evenly sized �s possible.
- Toss with h�lf of the s�l�d dressing. �dd more dressing �s desired.
- Enjoy immedi�tely.
