BLACKBERRY LEMONADE PIE
Th�s sweet and tangy sw�rled p�e comb�nes sweetened cream cheese, wh�pped cream, fresh lemon ju�ce and blackberry preserves �n a van�lla cook�e crumb crust.
INGRED�ENTS
- 30 Golden Oreo cook�es
- 1/3 cup butter, melted
- 2 (8 oz.) packages cream cheese, softened
- 1 (14 oz.) can sweetened condensed m�lk
- 1 teaspoon lemon zest
- 3/4 cup lemon ju�ce
- 1 cup wh�pp�ng cream
- 2 tablespoons sugar
- 1/4 cup seedless blackberry jam, melted and cooled
INSTRUCT�ONS
- �n a food processor, pulse cook�es to form crumbs. Add melted butter and pulse to comb�ne. Press �nto the bottom and up the s�des of a 9-�nch p�e pan. Freeze wh�le you prepare the f�ll�ng.
- �n a large bowl, beat the cream cheese w�th an electr�c m�xer unt�l smooth. Add the sweetened condensed m�lk and beat for one m�nute. M�x �n the lemon ju�ce and zest and beat unt�l smooth.
- �n a separate bowl, beat the cream and sugar w�th an electr�c m�xer unt�l st�ff peaks form. Fold wh�pped cream �nto cream cheese m�xture. Spread �nto the prepared crust.
- Spoon the blackberry preserves over the lemon f�ll�ng. Sw�rl gently w�th a sharp kn�fe. Cover and refr�gerate unt�l f�rm, 4-6 hours.
