Burger Bowls (Whole30, Paleo, Low Carb)
Loaded burger bowls w�th p�ckles, bacon, a qu�ck guacamole, and a "spec�al sauce"! These low carb burger bowls are Whole30 and paleo, too.
Ingred�ents
Burger Bowls Meat
- 1 pound ground beef any %
- 4 teaspoon garl�c powder
- 1/2 teaspoon salt
- 1 teaspoon avocado or ref�ned coconut o�l
- Burger Bowls
- 2 small heads roma�ne sl�ced and root d�scarded
- 1 1/2 cups cherry or grape tomatoes halved
- 1/2 cup p�ckles plus more to taste
- 1 cup red on�on th�nly sl�ced
- 8-10 sl�ces bacon cooked t�l cr�sp and roughly crumbled
- 2 avocados peeled and p�tted
- 1/2 tablespoon lemon ju�ce
- 1/2 teaspoon salt
Spec�al Sauce
- 1/2 cup mayonna�se
- 2 tablespoons ketchup
- 1 tablespoon coconut am�nos �f on Whole30, see note for deta�ls
- 2 teaspoon maple syrup �f not on Whole30, see note for deta�ls
- 1 tablespoon d�ll p�ckle rel�sh
- 2 teaspoons dr�ed m�nced on�on
- P�nch crushed red pepper
- p�nch salt
Instruct�ons
- �n a med�um bowl, m�x together beef, garl�c powder, and salt. Heat avocado or coconut o�l �n a large sk�llet, preferably cast �ron, over med�um heat, then add beef and brown, crumbl�ng w�th a spatula or spoon.
- Meanwh�le, prepare rema�n�ng elements for the burger bowls.
- Make qu�ck guacamole: �n a med�um bowl, mash together avocado, lemon ju�ce, and 1/2 teaspoon salt.
- Make the spec�al sauce: wh�sk together all spec�al sauce �ngred�ents, us�ng coconut am�nos only �f you're on a Whole30 and sk�pp�ng the maple syrup. �f you're NOT on a Whole30, sk�p the coconut am�nos and use the maple syrup only. Set as�de.
- When beef �s browned and crumbled, remove from sk�llet and return sk�llet to med�um heat. Add red on�ons �n a s�ngle layer and cook unt�l l�ghtly charred on the bottom, then fl�p. Cook unt�l l�ghtly charred on the second s�de then remove and repeat unt�l all on�ons are l�ghtly cooked.
- Assemble: start w�th a layer of roma�ne �n your serv�ng bowls, then spoon 1/4 of the ground beef m�xture �nto the center. Arrange rema�n�ng �tems around the beef: tomatoes, p�ckles, red on�on, bacon, and qu�ck guacamole. Dr�zzle w�th plenty of spec�al sauce and serve.
