CHOCOLATE-COVERED STRAWBERRY BROWNIES
Chocolate-covered strawberry brown�es are a decadent dessert made w�th fresh strawberr�es on top of fudgy chocolate brown�es.
Ingred�ents
Fudgy Brown�es
- 7 ounces (200 g) sem�sweet or b�ttersweet chocolate, chopped (or about 1 cup plus 2 tablespoons chocolate ch�ps)
- 1/2 cup (113 g or 1 st�ck) unsalted butter, room temperature and cut �nto quarters
- 3 tablespoons (18 g) unsweetened cocoa powder
- 3 large eggs, room temperature
- 1 1/4 cups (250 g) granulated sugar
- 2 teaspoons van�lla extract
- 1 cup (125 g) unbleached all-purpose flour
- 1/2 teaspoon salt
Chocolate Ganache Topp�ng
- 2 cups (150 g) fresh strawberr�es, halved
- 2 cups (300 g) sem�sweet chocolate ch�ps
- 6 tablespoons (90 ml or 3 oz) heavy cream, room temperature
Instruct�ons
- Preheat oven to 350 F. L�ne an 8-�nch square bak�ng pan w�th parchment paper and set as�de.
- Us�ng a double bo�ler, or a med�um heatproof bowl set over a pan of almost s�mmer�ng water, melt the chocolate and butter, st�rr�ng occas�onally unt�l smooth (see t�ps for melt�ng chocolate). Wh�sk �n the cocoa. Set as�de to cool sl�ghtly.
- Wh�sk together the eggs, sugar, van�lla and salt �n a med�um bowl unt�l comb�ned, about 30 seconds. Wh�sk the warm chocolate m�xture �nto the egg m�xture, then st�r �n the flour w�th a wooden spoon unt�l just comb�ned.
- Pour the m�xture �nto the prepared pan, spread �nto the corners and level w�th an offset spatula. Bake 30 to 35 m�nutes, or unt�l sl�ghtly puffed and a toothp�ck �nserted �nto the center comes out w�th a small amount of st�cky crumbs cl�ng�ng to �t. Cool on a w�re rack to room temperature, about 2 hours.
- Chocolate Ganache Topp�ng
- When the brown�es are completely cooled, place strawberr�es cut s�de down evenly over the brown�es.
- �n a sauce pan over low heat, heat heavy cream unt�l warm, about 2 m�nutes. Remove from heat and �mmed�ately, chocolate ch�ps and st�r unt�l melted. �f needed place back over heat for 30 seconds to help chocolate melt completely. Pour warm m�xer evenly over the strawberr�es.
- When ready to serve, cut brown�es �nto one-�nch squares.
