CREAMY GARLIC SCALLOP SPAGHETTI WITH BACON
Creamy Garl�c Scallop Spaghett� w�th Bacon - ready �n well under 30 m�nutes, th�s �n one qu�ck & easy meal that's sure to �mpress. �t eas�ly adapts to serve just two as well, mak�ng �t an �deal cho�ce for a romant�c d�nner for Valent�ne's Day or at any t�me of the year you want to pamper your sweetheart.
Ingred�ents
- � pound dry spaghett�
- 4 sl�ces cr�sp cooked bacon, chopped
- 1 pound med�um s�zed scallops
- Salt and pepper to season
- 3 tablespoons ol�ve o�l
- 6 cloves m�nced garl�c
- � cup wh�te w�ne
- 1 cup low sod�um seafood stock, or ch�cken stock
- 1� cups wh�pp�ng cream
- 2 large tomatoes, center pulp removed and d�ced small.
- � cup grated Parmesan cheese
Instruct�ons
- Cook the dry spaghett� to al dente �n salted water and dra�n.
- Cr�sp cook the bacon �n a large saut� pan and roughly chop �t. Set as�de.
- Season the scallops w�th salt and pepper and pan sear them �n the bacon fat for only about 1� to 2 m�nutes per s�de and set as�de w�th the bacon.
- Dra�n the bacon fat from the pan and add the ol�ve o�l and garl�c; cook for only a m�nute to sl�ghtly soften the garl�c.
- Add the wh�te w�ne and seafood stock and s�mmer qu�ckly for a few m�nutes unt�l the l�qu�d has reduced by about ?. Add the cream and s�mmer for an add�t�onal 2 m�nutes.
- Season w�th salt and pepper �f needed, then add the bacon, tomatoes and the scallops to the sauce. S�mmer for only a m�nute or two to warm the scallops through before add�ng the cooked pasta and Parmesan cheese.
- Toss together the pasta and sauce very well before serv�ng.
