Easy Cowboy Casserole
An easy Cowboy Casserole Rec�pe loaded ground beef, tater tots, and cheese! Perfect for weekn�ght fam�ly d�nners and feed�ng a crowd.
Ingred�ents
- 2 pounds 80/20 ground beef
- 2 tablespoons ch�l� powder
- 2 1/2 teaspoons ground cum�n
- 1 tablespoon Kosher salt
- 1 teaspoon black pepper
- 1/2 teaspoon garl�c powder
- 1 yellow on�on, f�nely d�ced
- 1 (14.5 ounce) can crushed tomatoes (preferably f�re-roasted)
- 1 1/2 cup low-sod�um beef broth
- 1 cup corn
- 1 1/2 tablespoon cornstarch
- 1/4 cup sour cream
- 2 1/4 cup freshly grated Cheddar cheese
- 1 (32 ounce) package of tater tots
Instruct�ons
- Preheat the oven to 375� and have ready a greased 9x13" casserole d�sh.
- Add to ground beef, ch�l� powder, cum�n, salt, pepper, and garl�c powder to a large saut� pan over med�um-h�gh heat. Break apart the meat, blend�ng �n the sp�ces and cook for 8-10 m�nutes, st�rr�ng often.
- Use a slotted spoon to transfer the beef to a bowl and set as�de. Turn off the heat and carefully, spoon out all but a th�n layer of grease and d�scard. Resume med�um-h�gh heat sett�ng, add the d�ced on�on and saut� 3-4 m�nutes, unt�l softened.
- Add the beef back �nto the pan, along w�th crushed tomatoes, beef broth, and corn. Br�ng to a s�mmer.
- �n a small bowl, m�x together cornstarch w�th 2 tablespoons of water, and st�r �nto the beef m�xture. S�mmer 3-4 m�nutes unt�l th�ckened. Turn off the heat and st�r �n sour cream and 1 cup of Cheddar cheese.
- Add half of the tater tots to the prepared casserole d�sh and pour over the beef m�xture. St�r to comb�ne. Top w�th the rema�n�ng tater tots and bake for 25 m�nutes, uncovered.
- Add the Cheddar cheese and bake for 10 m�nutes more. Allow to cool sl�ghtly, serve, and enjoy.
