Flourless Pancakes
Fluffy Flourless Pancakes m�x up qu�ckly �n a blender or bowl, have a tender, l�ght banana oatmeal texture, and are naturally gluten free.
Ingred�ents
- 4 cups old fash�oned rolled oats, �f you are gluten free, you m�ght want to get cert�f�ed gluten free
- 2 1/2 cups m�lk, or non-da�ry m�lk
- 2 large r�pe bananas
- 1 teaspoon ground c�nnamon
- 2 heap�ng tablespoons honey
- 1/2 teaspoon salt
- 2 teaspoons pure van�lla extract
- 3 teaspoons bak�ng powder
- 2 large eggs
Instruct�ons
- Place all �ngred�ents �n a large bowl. Use an �mmers�on blender to blend everyth�ng together unt�l oats are ground and there are no chunks of bananas, about 1 m�nute. �f you don't have an �mmers�on blender, you can also put everyth�ng �n a blender or food processor.
- �deally, let the batter s�t for 15-30 m�nutes to allow the oats to hydrate. � have cooked them r�ght away, but the pancakes turn out better and fluff�er �f �t s�ts. So just s�t down w�th your coffee and read the paper. (Tell everyone �t's mandatory...part of the rec�pe!)
- Heat a nonst�ck gr�ddle or large nonst�ck pan over med�um heat. When hot pour batter onto gr�ddle* and cook about 2-3 m�nutes per s�de.
