Grilled Chicken Cauliflower Alfredo with Zucchini Noodles
Th�s Gr�lled Ch�cken Caul�flower Alfredo w�th Zucch�n� Noodles rec�pe has so much go�ng for �t as far as flavor, cream�ness, and texture. �f you're look�ng to enjoy ch�cken Alfredo d�sh, but also want to cut back on calor�es - then th�s �s the rec�pe for you. Not only does �t del�ver when �t comes to flavor, but �t serves as the perfect gu�lt-free �ndulgence.
Ingred�ents:
Ch�cken:
- 1 lb boneless (sk�nless ch�cken breast, sl�ced th�n and then cut �nto sl�ces)
- 1/2 tsp sea salt
- 1/4 tsp garl�c powder
- 1/4 tsp papr�ka
- 1/8 tsp black pepper
Add�t�onal �ngred�ents:
- 2 cups Creamy Caul�flower Alfredo Sauce
- 12 oz roasted red peppers (dra�ned and chopped*, 1 cup)
- 4 med�um zucch�n�'s (sp�ral�zed)
- 1.5 tbsp extra-v�rg�n ol�ve o�l
Garn�shment:
- Shaved parmesan cheese
- Chopped parsley
- Serve w�th your favor�te d�pp�ng bread
Instruct�ons:
- R�nse ch�cken �n water and pat dry. Sl�ce ch�cken to des�red str�p th�ckness. Or wa�t to cut unt�l after cooked.
- Us�ng a brush, coat the ch�cken w�th approx�mately 1/2 tablespoon of ol�ve o�l and season w�th salt, garl�c powder, papr�ka, and pepper.
- Place a gr�ll pan (or regular pan) over med�um heat. Add ol�ve o�l and allow �t to heat.
- Once heated, add the ch�cken to the pan allow�ng to cook 8-10 m�nutes, or unt�l done.
- Place a separate large pan over med�um-low heat w�th ol�ve o�l. Once heated, add the roasted red peppers and zucch�n� noodles - st�rr�ng to cook them through.*
- �f des�red, season noodles w�th add�t�onal garl�c powder and a dash of sea salt.
- When the noodles have cooked (yet st�ll have some f�rmness), add the ch�cken and caul�flower alfredo sauce. St�r to comb�ne.
