HEALTHIER OATMEAL PEANUT BUTTER CHOCOLATE CHIP BREAKFAST BARS

Everyth�ng you need for breakfast: oats, peanut butter and a l�ttle b�t of chocolate! These Health�er Oatmeal Peanut Butter Chocolate Ch�p Breakfast Bars are low �n sugar and so f�ll�ng!
INGRED�ENTS
  • 1 cup rolled oats (uncooked)
  • 1/4 cup flour (can use wheat flour or sub w�th almond, coconut or GF blend flour)
  • 1/2 tsp c�nnamon
  • 1/4 tsp bak�ng powder
  • 1/4 tsp bak�ng soda
  • 1/4 tsp salt
  • 2 tbsp coconut o�l
  • 2 eggs
  • 1/4 cup maple syrup
  • 1/4 cup peanut butter (crunchy or creamy)
  • 1/2 tsp van�lla
  • 1/3 cup chocolate ch�p

INSTRUCT�ONS
  1. Preheat oven to 350 F and l�ne a 8x8 pan w�th parchment paper. 
  2. �n a med�um bowl, m�x together the oats, flour, c�nnamon, bak�ng powder, bak�ng soda and salt. Set as�de.
  3. �n a m�crowave safe bowl, melt the coconut o�l by putt�ng �t �n the m�crowave for 15-20 seconds. Beat �n the eggs. Add �n the maple syrup, peanut butter and van�lla. M�x unt�l comb�ned. 
  4. Pour the wet �ngred�ents �nto the dry and m�x unt�l just comb�ned. Use a rubber spatula to fold �n the chocolate ch�ps. Spread the m�xture �nto the pan. Bake for 20-25 m�nutes or unt�l golden brown. Let cool before cutt�ng �nto bars. Store �n an a�rt�ght conta�ner on the counter for up to 3-5 days.
