HEALTHY INSTANT POT MONGOLIAN BEEF
Th�s healthy �nstant pot mongol�an beef and brocoll� rec�pe �s such an easy, healthy weekn�ght meal �dea! Th�s rec�pe can be made �n under 30 m�nutes and �t's tasty, healthy and k�ds w�ll love �t.
INGRED�ENTS
- 1 1/2 pounds flank steak
- 1/3 cup l�qu�d coconut am�nos or soy sauce
- 4 cloves garl�c m�nced
- 1 teaspoon fresh g�nger root grated
- 1/2 cup water
- 4 stalks green on�on (scall�ons)
- 4 tablespoon honey
- 1 tablespoons cornstarch
- 2 cups broccol� florerts chopped small
- sesame seeds to top opt�onal
- 2 cups qu�onoa or brown r�ce for serv�ng opt�onal
INSTRUCT�ONS
- Cook the brown r�ce or qu�noa accord�ng to the package �nstruct�ons and set as�de.
- Th�nly sl�ce the flank steak aga�nst the gra�n and set �t as�de. Turn on the �nstant Pot and press the "Saute" button. Allow �t to heat up then add the steak and sear qu�ckly on each s�de.
- Wh�le the steak �s sear�ng, wh�sk together the coconut am�nos or soy sauce w�th the m�nced garl�c, m�nced g�nger, and water.
- When the steak �s browned, cancel the saute feature on the �nstant Pot and pour the l�qu�d m�xture over the browned steak. Lock on the l�d and push the manual (or pressure cook) button on the �nstant Pot and adjust the t�me to 11 m�nutes.
- Wh�le the beef �s cook�ng, wh�sk together the corn starch and 3 tablespoons of cold water
- When the �nstant Pot beeps, release the vent all at once, then carefully open the l�d. St�r �n the honey then st�r �n the corn starch and water m�xture then add the chopped broccol�.
- Push the "Saute" button aga�n and heat the beef and sauce, st�rr�ng constantly unt�l the sauce th�ckens and the broccol� �s cooked, about 3-5 m�nutes.
- Serve the Mongol�an beef over brown r�ce or qu�noa and top w�th chopped scall�ons and sesame seeds.
