healthy sesame chicken chopped salad: paleo & whole30
Grow�ng up, my best fr�end�s mom would always make th�s sesame ch�cken chopped salad. �t was what she always brought to gather�ngs and what she always made us dur�ng the summer. � love �t so much so � dec�ded to make a healthy, Paleo vers�on. You know, w�thout the sugary dress�ng and wonton str�ps m�xed �n.
Ingred�ents
For the Dress�ng:
- 1/3 cup coconut am�nos
- 1/4 cup red w�ne v�negar (or apple c�der v�negar)
- 3 tablespoons avocado o�l
- 2 tablespoons toasted sesame o�l
- 2 tablespoons m�nced g�nger
- 1 teaspoon on�on powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
For the Salad:
- 1.5 pounds boneless, sk�nless ch�cken th�ghs
- 4 d�ced green on�ons (can sub for 1/2 red on�on f�nely d�ced)
- 1/2 large green cabbage, th�nly sl�ced, or one whole green cabbage �f �t�s small
- 1/2 red cabbage, th�nly sl�ced
- 2 cups shredded or matchst�ck carrots
- 1 cup sl�ced almonds
- 1 can Mandar�n oranges (no sugar/syrup � check labels!)
- 1/2 cup chopped and loosely packed c�lantro
- 1 tablespoon black sesame seeds
- 1 tablespoon wh�te sesame seeds
Instruct�ons
- Comb�ne all the �ngred�ents for the dress�ng �n a bowl
- �n a plast�c bagg�e, add about 3-4 tablespoons of dress�ng w�th the ch�cken
- Allow to mar�nate for at least a half hour
- Add ch�cken w�th the dress�ng �nto a large sk�llet and cook over med�um heat for 6-8 m�nutes on each s�de or unt�l cooked thoroughly or gr�ll
- Allow to cool to room temperature before chopp�ng and add�ng to the salad
- Comb�ne all other salad �ngred�ents bes�des dress�ng and ch�cken �n a large bowl
- When ch�cken �s cool, add to the salad
- St�r �n dress�ng well and enjoy!
