Instant Pot Chicken Alfredo Pasta

Th�s �nstant Pot Ch�cken Alfredo Pasta �s so del�c�ous and so easy to make, th�s �s def�n�tely go�ng to be one of your go-to �nstant Pot d�nners! 
Ingred�ents
  • 2 tablespoons ol�ve o�l
  • kosher salt and freshly ground black pepper
  • 1/2 teaspoon garl�c powder
  • 2 large ch�cken breasts about 1.5 pounds total
  • 4 cloves of garl�c m�nced
  • 1 quart low sod�um ch�cken broth
  • 1 p�nt heavy wh�pp�ng cream
  • 1 pound of uncooked penne pasta
  • 8 oz of freshly shredded real parmesan cheese
  • flat leaf parsley m�nced for garn�sh

Instruct�ons
  1. Season ch�cken breasts w�th salt, pepper and garl�c powder.
  2. Set 6 Qt �nstant Pot to Saute funct�on and h�t Adjust button unt�l More �s l�t. Th�s heats �nstant Pot to h�ghest heat for sear�ng.
  3. Add ol�ve o�l to �nstant Pot and sear ch�cken breast �n �nstant Pot for several m�nutes on both s�des unt�l evenly browned.
  4. Remove ch�cken from pot and set as�de to be added back �n w�th the rest of the �ngred�ents.
  5. Add garl�c to pot and cook for about one m�nute.
  6. Add ch�cken broth and use wooden spoon to scrape up browned b�ts from the bottom of the pot.
  7. Add heavy cream, uncooked pasta, a teaspoon of kosher salt and several turns of freshly ground pepper.
  8. Return ch�cken breasts to �nstant Pot and st�r all �ngred�ents together.
  9. H�t off button to end Saute funct�on, then lock l�d �n place w�th Pressure valve set to seal�ng.
  10. Cook on Manual, H�gh Pressure for 6 m�nutes. �nstant Pot w�th take 10-15 m�nutes to come to pressure and then countdown from 6 m�nutes.
  11. Once cook�ng �s complete, use Qu�ck Pressure Release.
  12. S�nce we are cook�ng a pound of pasta, there may be some starches and l�qu�ds that start to splatter. �f that happens, use wooden spoon or an oven m�tt to qu�ckly close pressure valve. Wa�t one m�nute and try aga�n.
  13. Once pressure p�n drops, unlock l�d and remove ch�cken breasts. Use a meat thermometer to ensure they have reached 165 F degrees. Set as�de to rest.
  14. St�r pasta and cream m�xture together and slowly add �n freshly grated parmesan cheese.
  15. Sl�ce ch�cken breast and comb�ne w�th pasta.
  16. Serve w�th add�t�onal freshly ground pepper, shredded parmesan and chopped flat leaf parsley.
