Old-Fashioned Strawberry Shortcake with Grandma�s Biscuits
We love mak�ng these b�scu�ts. They can be rolled out or dropped. For th�s part�cular rec�pe, � actually grabbed spoonfuls and shaped them by hand, so they were more l�ke drop b�scu�ts. � also added �n a teaspoon of sugar just to add a l�l sweetness to the rec�pe s�nce � planned to use them for strawberry shortcake.
Ingred�ents
B�scu�ts
- 2 cups all-purpose flour
- 3 teaspoons bak�ng powder
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 1/3 cup unsalted butter
- 3/4 cup m�lk
Wh�pped Cream
- 2 ounces cream cheese
- 2 cups heavy wh�pp�ng cream
- 1 teaspoon van�lla extract
- 1/2 cup powdered sugar
- Strawberr�es washed and sl�ced
Instruct�ons
- For the b�scu�ts, m�x together flour, bak�ng powder, salt, and sugar �n a med�um bowl.
- Use a pastry blender to blend flour m�xture together w�th cold sl�ced butter. Cont�nue unt�l m�xture �s well blended.
- Add m�lk to m�xture, and m�x well. You should be left w�th a somewhat st�cky but st�ll manageable dough.
- Grab spoonfuls of dough and shape �nto b�scu�ts about 3/4 �nch th�ck. Place on ungreased cook�e sheet.
- Bake at 425� for about 15-20 m�nutes, or unt�l tops are beg�nn�ng to turn golden.
- Meanwh�le, wash strawberr�es.
- M�x together cream cheese, heavy wh�pp�ng cream, van�lla, and powdered sugar to form a wh�pped cream.
- Once the b�scu�ts have cooled, sl�ce a b�scu�t �n half.
- Place bottom half of b�scu�t on plate. Add a layer of sl�ced strawberr�es, followed by a generous layer of wh�pped cream, then another layer of sl�ced strawberr�es. Top w�th the top half of the b�scu�t.
- Add a small dollop of wh�pped cream to the top, followed by a whole strawberry.
- Serve and enjoy!
