One Pot Spicy Thai Noodles

One Pot Sp�cy Tha� Noodles are SO good and easy to cook up. Th�s �s a vegetar�an rec�pe, but there are opt�ons for added prote�n too!
Ingred�ents
  • 1 pound l�ngu�ne
  • 2 TBS ol�ve o�l , d�v�ded
  • 2 large eggs , l�ghtly beaten
  • 1/2 tsp crushed red pepper flakes
  • 1 zucch�n� , cut �n half vert�cally, then sl�ced �n half c�rcles
  • 8 ounces mushroom , chopped
  • 3 cloves garl�c , m�nced
  • 2 TBS brown sugar
  • 1/3 cup low sod�um soy sauce
  • 1.5 TBS Sr�racha hot sauce (th�s �s A LOT of sp�ce, tone �t down �f you don't l�ke sp�cy)
  • 2 �nches fresh g�nger , grated
  • 1 handful fresh c�lantro , chopped
  • 4 green on�ons , chopped
  • 1/4 cup peanuts , chopped

Instruct�ons
  1. �n a large stock pot, f�ll halfway w�th water, salt, and br�ng to a bo�l. Add l�ngu�ne and cook accord�ng to package d�rect�ons. Dra�n and set as�de.
  2. �n a med�um bowl comb�ne brown sugar, soy sauce, sr�racha, and g�nger; wh�sk well to comb�ne; set as�de.
  3. Return large stock pot to stove, heat over med�um heat, add 1 TBS ol�ve o�l. Add beaten eggs and red pepper flakes and st�r to scramble the eggs. Once cooked, set as�de w�th pasta.
  4. Return large stock pot to stove, heat rema�n�ng 1 TBS o�l over med�um heat. Add zucch�n�, mushrooms, and garl�c. Saute over med�um h�gh heat for 5-6 m�nutes or unt�l vegg�es are cooked through.
  5. Turn heat down to low, add pasta and eggs back to pot, then pour the sauce m�xture over the top. Us�ng a wooden spoon, st�r well to coat pasta and vegetables w�th sauce. Remove from heat, add peanuts, green on�ons, and c�lantro; st�r to comb�ne.
  6. Serve �mmed�ately.
