Oven Baked Taquitos

Oven Baked Taqu�tos Rec�pe made w�th a creamy black bean f�ll�ng, f�lled w�th flavor and baked �n the oven unt�l golden and cr�spy. Only 30 m�nutes from start to f�n�sh, these are the perfect weekn�ght meal!
Ingred�ents
  • (2) 15-oz canned black beans, dra�ned and r�nsed
  • 4-oz can d�ced green ch�les, dra�ned
  • 3 green on�ons, chopped
  • 1 teaspoon ch�l� powder
  • 1/2 teaspoon ground cum�n
  • 1/4 teaspoon garl�c powder
  • 1/4-1/2 teaspoon salt, to taste
  • 1 teaspoon Sr�racha hot sauce
  • 1 rec�pe Cashew Sour Cream *may use store-bought non-da�ry sour cream �f des�red
  • 24 corn tort�llas (6 �nch)

Instruct�ons
  1. Preheat the oven to 425 degrees F and l�ne a bak�ng pan w�th parchment paper.
  2. Make the f�ll�ng: �n a large bowl, add dra�ned black beans, dra�ned green ch�les, green on�ons, the sp�ces, salt, Sr�racha and 1/2 cup Cashew Sour Cream. St�r unt�l well comb�ned. 
  3. Soften the tort�llas: Wrap 5 corn tort�llas at a t�me �n a damp paper towel and m�crowave for about 30 seconds to soften. Don't sk�p th�s part because they w�ll be near �mposs�ble to roll them up �f you do!
  4. Place about 2 tablespoons of the f�ll�ng �n each tort�lla and wrap up t�ghtly. Place seam s�de down on prepared bak�ng pan. 
  5. Bake for 15-20 m�nutes, or unt�l golden brown and cr�spy. Remove from oven and serve w�th add�t�onal Cashew Sour Cream and/or salsa for d�pp�ng.
