Thai Chicken Larb Salad
Tha� Larb Salad - Th�s Larb rec�pe �s made w�th ground ch�cken, l�me ju�ce and fresh herbs. Th�s flavorful and healthy salad �s easy to make and full of authent�c Tha� flavors!
Ingred�ents
- 1/4 cup f�sh sauce
- 6 tablespoons freshly squeezed l�me ju�ce
- 1/4 cup brown sugar
- 1 Tha� ch�l� or serrano ch�l�, th�nly sl�ced (more or less to your taste) or 1/2 teaspoon Tha� ch�l� powder
- 1 tablespoon vegetable, canola or coconut o�l
- 1 shallot, f�nely chopped
- 4 garl�c cloves, n�nced
- 1 1/2 pounds ground ch�cken
- 2 scall�ons (green on�ons), th�nly sl�ced
- 1/2 red on�on, th�nly sl�ced
- 2 tablespoons fresh c�lantro, chopped
- 1/4 cup fresh m�nt, chopped
To Serve
- Lettuce leaves
- Carrot st�cks
- Cucumber sl�ces
- Fresh m�nt and fresh c�lantro leaves (opt�onal)
Instruct�ons
- �n a small bowl m�x together the f�sh sauce, l�me ju�ce and sugar. M�x unt�l well comb�ned.
- Heat a wok or med�um s�ze sk�llet over h�gh heat. Add the o�l. When the o�l �s hot, add the ch�l�es, shallots and garl�c and cook for about 1 m�nute or unt�l the shallots become translucent.
- Add the ground ch�cken and cook for about 4 - 5 m�nutes or unt�l the ch�cken �s cooked through and no longer p�nk.
- Remove from the heat and add the scall�ons, on�ons and the sauce m�xture. Toss to comb�ne. Add the c�lantro and m�nt and toss to comb�ne.
- Serve w�th lettuce leaves, carrots st�cks, cucumber sl�ces and more fresh herbs (opt�onal).
