VEGAN CHOCOLATE CHIP COOKIES
A trad�t�onal, old-fash�oned chocolate ch�p cook�e that ent�rely sat�sf�es that cook�e crav�ng. A s�mple vegan rec�pe that you�ll make t�me and t�me aga�n!
Ingred�ents
- 1 Tbsp ground flax seed
- 3 Tbsp water
- 1 1/2 cups all purpose flour*
- 1 tsp bak�ng soda
- 1/2 tsp salt
- 1/2 cup vegan margar�ne (� used Earth Balance), room temperature
- 1/2 cup packed dark brown sugar
- 1/3 cup vegan granulated sugar or coconut sugar
- 1 tsp pure van�lla extract
- 1 cup non-da�ry chocolate ch�ps
Instruct�ons
- Preheat oven to 350�F. Place a p�ece of parchment or a s�l�cone l�ner over a bak�ng sheet, or l�ghtly o�l the pan.
- Comb�ne the flax seed and water �n a small bowl to make a flax egg. Set as�de.
- Comb�ne the flour, bak�ng soda, and salt �n another bowl. Set as�de.
- Place the room-temperature margar�ne (� warm up ch�lled margar�ne �n the m�crowave for about 20 seconds) �n another bowl. Add the sugars and wh�sk v�gorously for about 2 m�nutes. The m�xture should become l�ght and fluffy and take on a l�ght be�ge color.
- Add the flax egg and the van�lla to the butter m�xture, and wh�sk well unt�l comb�ned.
- Add the dry flour m�xture to the wet m�xture, and st�r together w�th a rubber spatula or wooden spoon just unt�l comb�ned � do not overm�x.
- Add the chocolate ch�ps and gently fold �nto the batter.
- Drop by heap�ng tablespoonfuls onto the prepared bak�ng sheet. Bake for 12-14 m�nutes, rotat�ng once, unt�l just barely beg�nn�ng to brown on the bottom. They w�ll look underdone on top.
- Remove from the oven and let cool on the bak�ng sheet for about 5 m�nutes. Transfer to a w�re cool�ng rack and let cool 10 m�nutes before enjoy�ng � �f you can wa�t!
