Vegan Oatmeal Chocolate Chip Cookies
Cr�spy on the outs�de, chewy �n the m�ddle. So easy to make w�th no we�rd �ngred�ents.
Ingred�ents
Dry �ngred�ents:
- 1 1/4 cups all-purpose flour
- 1 cup rolled oats
- 1 teaspoon c�nnamon
- 3/4 teaspoon bak�ng soda
- 1/4 teaspoon salt
Wet �ngred�ents:
- 3/4 cup vegan butter , cold (such as Earth Balance)
- 1/2 cup wh�te sugar
- 1/2 cup brown sugar
- 2 teaspoons van�lla extract
- 1/2 cup vegan chocolate ch�ps (or sub ra�s�ns for oatmeal ra�s�n cook�es)
Instruct�ons
- Preheat your oven to 350F (180C). L�ghtly grease a bak�ng pan.
- �n a large bowl, wh�sk together all the dry �ngred�ents.
- �n a med�um bowl, add all the wet �ngred�ents, and use a beater to cream the vegan butter and sugar together. Dump the wet �ngred�ents �nto the dry, and m�x. � f�nd d�fferent vegan butter brands have d�fferent mo�sture contents, so �f you f�nd the dough �s a l�ttle dry, add up to 1 Tablespoon of water unt�l the dough holds together. When �t just comes together st�r �n the chocolate ch�ps. Feel free to snack on cook�e dough, �t can be eaten raw!
- Take two tablespoons of cook�e dough and roll �nto a ball and place on the prepared bak�ng sheet. Repeat unt�l you have used up all the cook�e dough. Bake 14 to 18 m�nutes, the cook�es w�ll have spread but look almost raw, they should be golden on the on unders�de. Let cool on the pan to let the cook�es set.
