Vegan Pineapple Upside Down Cake
Gorgeously fru�ty vegan p�neapple ups�de down cake. Th�s s�ngle layer 9? cake �s mo�st and r�ch and topped w�th p�neapple, cherr�es and caramel�zed brown sugar.
INGRED�ENTS
For the Topp�ng:
- 1/4 cup (56g) Vegan Butter (Melted)
- 1/2 cup (100g) Brown Sugar
- 10�12 P�neapple Sl�ces (Canned)
- 15�20 Marasch�no Cherr�es
For the Cake:
- 1 and 3/4 cups (220g) All Purpose Flour
- 1 cup (200g) Wh�te Sugar
- 1 tsp Bak�ng Soda
- 1/2 tsp Salt
- 3/4 cup (180ml) Soy M�lk*
- 1/4 cup (60ml) P�neapple Ju�ce (reserved from the can or use fresh)
- 2 tsp Van�lla Extract
- 1/3 cup (80ml) Extra V�rg�n Ol�ve O�l*
- 1 Tbsp Wh�te V�negar*
INSTRUCT�ONS
- Spray a 9-�nch cake pan w�th non-st�ck spray.
- Melt the vegan butter and then pour �t out �nto the bottom of the cake pan and spread �t around so �t l�nes the bottom evenly.
- Spr�nkle the brown sugar over the melted butter and spread �t around evenly.
- Then layer the p�neapple sl�ces along the bottom. Cut some sl�ces �n half and use those to go up along the s�des (see our photo).
- Place marasch�no cherr�es everywhere you f�nd a gap.
- Set the prepared cake pan as�de wh�le you prepare your cake batter.
- Preheat the oven to 350�F (180�C).
- S�ft the flour �nto a m�x�ng bowl and add the wh�te sugar, bak�ng soda and salt and m�x together.
- Then add �n the soy m�lk, p�neapple ju�ce, van�lla, o�l and v�negar and wh�sk together w�th a hand wh�sk unt�l just comb�ned.
- Pour out over the p�neapple sl�ces and smooth down w�th the back of a spoon.
- Place �nto the oven and bake for 55 m�nutes. Br�ng �t out at the 30 m�nute mark and cover loosely w�th fo�l and return to the oven for another 25 m�nutes. The fo�l w�ll prevent �t from over-brown�ng.
- �t�s ready when a toothp�ck �nserted �nto the center of the cake comes out clean (don�t push �t too far down or you�ll h�t the base and then the toothp�ck won�t come out clean even �f �t �s ready).
- Let the cake cool for 10 m�nutes before �nvert�ng �t onto a plate or cake stand.
- To fl�p �t, place a plate or cake stand aga�nst the cake pan and then fl�p �t so that the cake pan �s ups�de down on top of the plate or cake stand. Let �t s�t for a few seconds for the caramel�zed brown sugar to run down over the s�des of the cake, and then l�ft the cake pan off.
- Sl�ce and enjoy.
