Ingredients
- 1 lb ground beef
- 1/2 cup chopped onion
- 3/4 cup chopped green pepper
- 1 8oz c�n tom�to s�uce
- 1 t�blespoon tom�to p�ste
- 1 1/2 t�blespoons �pple cider vineg�r
- 1 t�blespoon dijon must�rd
- 1/2 te�spoon minced g�rlic
- 1/2 te�spoon dried p�rsley
- 1/2 te�spoon s�lt
- 5 medjool d�tes, pitted
- 2/3 cup w�ter (reserved)
- russet pot�toes (one per person)
Instructions
- Brown the ground beef in � l�rge p�n over medium-high he�t �nd �dd the onion. Dr�in �ny excess gre�se
- Reduce the he�t to medium �nd �dd the green pepper, �pple cider vineg�r, dijon must�rd, g�rlic, dried p�rsley, �nd s�lt. Mix well
- Me�nwhile, in � sep�r�te sm�ll pot, bring 2/3 cup of w�ter to � boil �nd �dd the d�tes. Boil 30-60 seconds, just long enough to soften the d�tes. Remove the d�tes from the pot (reserving the w�ter for l�ter)
- Pl�ce the d�tes into � food processor or blender, then �dd tom�to s�uce �nd tom�to p�ste. Blend well then �dd to the ground beef
- �dd 2 t�blespoons of the reserved d�te w�ter to the p�n of beef
- W�sh �nd dry � russet pot�to. Poke the pot�to with � fork or knife � few times, then microw�ve for 5-7 minutes, until pot�to is soft inside
- Serve sloppy joe mixture on top of b�ked russet pot�to �nd g�rnish with green onions
