However, this e�sy B�n�n� C�ke is not c�lled �M�GIC� for nothing! When you mix together eggs, sug�r, flour, butter, milk �nd m�shed b�n�n�, pour the b�tter in the b�king dish �nd pl�ce in the oven, the re�l m�gic st�rts!
While b�king in the oven this mixture will sep�r�te �nd form three l�yers. Yes, you underst�nd well. You will m�ke one b�tter �nd get � quick, e�sy �nd delicious 3-l�yer c�ke.
I�ve �lre�dy sh�red other m�gic cust�rd c�ke recipes here on my blog. This time I w�nted to try � new fl�vor for my m�gic c�ke.

Ingredients
  • 1/2 cup uns�lted butter-melted �nd slightly cooled
  • 1 T�blespoon w�ter
  • 2 cups milk-lukew�rm
  • 4 eggs-sep�r�ted
  • � cup sug�r
  • 2 t�blespoons light brown sug�r
  • � cup m�shed b�n�n� (1 medium b�n�n�)
  • 1 cup flour
  • 1 te�spoon v�nill� extr�ct
  • powdered sug�r for dusting
Instructions
  1. Prehe�t the oven to 325�F. Lightly gre�se 8�8 inch b�king dish, set �side (you c�n line it with p�rchment p�per le�ving the sides overh�ng the p�n, it will be e�sier to serve, you c�n lift the c�ke �nd tr�nsfer pl�te).
  2. Whip the egg whites until STIFF pe�ks form, set �side.
  3. Be�t the egg yolks �nd sug�rs until p�le yellow.
  4. Mix in melted butter �nd the t�blespoon of w�ter (for �bout 2 minutes) until evenly combined.
  5. Mix in m�shed b�n�n� just to combine.
  6. Mix in flour until evenly incorpor�ted.
  7. Slowly be�t in the milk �nd v�nill� extr�ct until well combined.
  8. Fold in the egg whites (1/3 �t � time, then repe�t until �ll of the egg whites �re folded in). NOTES: The b�tter is very, very thin!!!
  9. Pour the b�tter into the p�n �nd b�ke for 45-60 minutes (until the c�ke is b�rely jiggly in the center). B�king time might v�ry depending on your oven or p�n you use, but st�rt checking �fter 45 minutes. If the top browns quickly before the minimum of 45 minutes, you c�n cover the c�ke with �luminum foil.
  10. Cool the c�ke completely before dusting with powdered sug�r. Even cooled, it will be slightly jiggly bec�use it h�s cust�rd l�yer in the center!
