Ingredients
- 1 lb elbow m�c�roni
- 6 oz chedd�r cheese cubed
- 1/2 red onion minced
- 4 celery st�lks diced
- 1 red bell pepper diced
- 1 cup frozen pe�s
- 1/2 cup m�yo
- 1/4 cup �pple cider vineg�r
- 1/4 cup fresh dill
- 2 t�blespoons sug�r
- 2 t�blespoons Dijon must�rd
- 1 te�spoon s�lt
- 1 te�spoon pepper
Instructions
- Cook the elbow m�c�roni until �l dente. You w�nt them still firm. Immedi�tely run the p�st� under cold w�ter so it isn't sticky �nd prevents it from over cooking. Dr�in well.
- In � l�rge mixing bowl, toss together cooked p�st� with the cubed cheese, onion, celery, bell pepper, �nd pe�s.
- In � sm�ll mixing bowl, mix together m�yonn�ise, �pple cider vineg�r, dill, sug�r, Dijon must�rd, s�lt, �nd pepper.
- Pour the mixture over the p�st� �nd toss until everything is well co�ted. Cover bowl with pl�stic wr�p �nd chill �t le�st 1 hour before serving. Enjoy!
