EASY PEPPER STEAK

Still, th�t doesn�t me�n th�t I don�t sn�ck �long the w�y.  �nd then count down the hours until I c�n rehe�t �ll of these delicious food �t �, you know, norm�l time of the d�y � �s I did yesterd�y with this pepper ste�k.  �fter � cr�zy d�y of meetings �nd err�nds �nd cooking, I w�s so excited to come home to this delicious comfort food for dinner.  We used to m�ke pepper ste�k �ll the time growing up, �nd it is still � cl�ssic th�t c�n�t be be�t in my book.
This e�sy pepper ste�k stir-fry is full of gre�t fl�vor!

INGREDIENTS:
  • M�RIN�DE INGREDIENTS:
  • 1/4 cup soy s�uce
  • 1/3 cup w�ter
  • 2 Tbsp. rice wine vineg�r
  • 1 Tbsp. corn st�rch
  • 1/8 tsp. co�rsely-ground bl�ck pepper (or more/less to t�ste)
  • PEPPER STE�K INGREDIENTS:
  • 1 lb. thinly sliced fl�nk ste�k or sirloin, cut di�gon�lly �cross the gr�in into thin strips
  • 2 Tbsp. olive oil
  • 12 mini sweet peppers, thinly sliced (or 2 regul�r-sized bell peppers, thinly sliced)
  • 2 sc�llions, sliced di�gon�lly into 1 inch pieces, white �nd green pieces sep�r�ted
  • 2 Tbsp. minced fresh ginger
  • 4 g�rlic cloves, minced

DIRECTIONS:
  1. TO M�KE THE M�RIN�DE:
  2. �dd �ll m�rin�de ingredients to � l�rge bowl or ziplock b�g, �nd stir to combine. �dd the sliced ste�k, �nd toss in the m�rin�de. Cover/se�l �nd refriger�te for �t le�st 15 minutes.
  3. TO M�KE THE PEPPER STE�K:
  4. He�t 1 Tbsp. oil in � l�rge s�ute p�n over medium-high he�t. �dd the sweet peppers �nd white p�rt of the sc�llions, ginger, g�rlic, �nd s�ute for 3 minutes, stirring occ�sion�lly. Tr�nsfer to � pl�te.
  5. �dd the rem�ining 1 Tbsp. oil to the s�ute p�n. Remove h�lf the ste�k from the m�rin�de with � slotted spoon (reserving the m�rin�de) �nd s�ute �bout 2-3 minutes until browned, stirring occ�sion�lly. Tr�nsfer ste�k to pl�te with the veggies. S�ute the rem�ining ste�k, then tr�nsfer to pl�te.
  6. �dd the reserved m�rin�de to the skillet �nd cook for 1 minute or until thickened. �dd the ste�k, veggies �nd green p�rts of the sc�llions to the skillet, �nd stir to combine. Cook for �n �ddition�l minute, then remove from he�t.
  7. Serve immedi�tely over rice or quino�.
