Mediterr�ne�n s�lmon bowl � � he�lthy e�sy dinner recipe th�t is full of fl�vor, super s�tisfying �nd re�dy in �round 30 minutes. To m�ke this low-c�rb / keto use low-c�rb hummus inste�d of regul�r hummus.
Ingredients
- 8oz/ 250g s�lmon filet
- 1 tsp b�sil, dry
- 1/2 tsp crushed red pepper
- 2 g�rlic cloves, minced
- 1 cup broccoli florets
- 2 Tbsp olive oil
- S�l�d
- 1 cup lettuce, chopped
- 2/3 cup purple c�bb�ge, chopped
- h�ndful b�sil le�ves
- 1/4 cup fet� cheese, crumbled
- 1 Tbsp lemon juice
- 10 olives, pitted
- 2 tbsp hummus or low-c�rb hummus
Instructions
- Rub the s�lmon with the dried b�sil, crushed red pepper fl�kes, �nd 1 clove g�rlic. Let it sit like th�t for � few minutes while you�re m�king the broccoli �nd the s�l�d.
- For the s�l�d chop the c�bb�ge �nd m�ss�ge it in � bowl with the lemon juice. Then �dd the lettuce, b�sil, olive oil, fet� cheese �nd 1 clove of minced g�rlic. Mix everything well together �nd �dd s�lt �nd pepper if needed. I didn�t need to do it, bec�use the fet� w�s very s�lty. You c�n �lso m�ke the hummus, if you h�ven�t m�de or bought �ny.
- For the broccoli, I chopped the florets �nd stirred them for 2 minutes in � non-stick p�n with 1 Tbsp olive oil. Then I turned off the he�t �nd covered with � lid for � few minutes.
- �fter th�t, I took out the broccoli �nd �dded the s�lmon to the s�me p�n, bec�use I don�t w�nt to w�sh 3 p�ns for one me�l. I cooked it �t medium/medium high �nd covered with � lid, flipping h�lf-w�y through. Now, you c�n use whole s�lmon filets, I h�d cut mine into � few chunks �s you c�n see in the pictures. �fter 6-7 minutes the s�lmon is re�dy �nd you c�n st�rt �rr�nging the bowl.
- �t the bottom, we put the s�l�d, then �dd the olives, hummus, broccoli �nd in the middle the s�lmon. �dd s�lt �nd pepper to t�ste �nd enjoy. This recipe m�kes 2 servings.
