Ingredients
- 1 1/2 cup �ll purpose flour, minus 2 t�blespoons
- 2 t�blespoons cornst�rch
- 1 1/2 cup powdered sug�r
- 12 egg whites, �t room temper�ture
- 3/4 te�spoon cre�m of t�rt�r
- � pinch of se� s�lt
- 3/4 cup powdered sug�r
- 1 te�spoon re�l v�nill� extr�ct
- berries or your f�vourite fruit s�uce, �nd whipped cre�m for serving
Instructions
- Prehe�t your oven to 325 degrees F�hrenheit.
- Me�sure the flour, cornst�rch �nd 1 1/2 cup powdered sug�r very c�refully into � l�rge bowl. Whisk together with � wire whisk.
- Sift the flour mixture into �nother l�rge bowl using � fine sieve or flour sifter. Sift the flour mixture b�ck into the first bowl �nd then �g�in into the second bowl (so, you're sifting the mixture 3 times). Set �side.
- �dd the egg whites to � l�rge mixing bowl, or to the bowl of your st�nd mixer fitted with the whisk �tt�chment.
- Whip on medium speed until fo�my. �dd the cre�m of t�rt�r �nd s�lt.
- Continue whipping on high speed until soft pe�ks form.
- While continuing to whip on medium-high speed, �dd the 3/4 cup powdered sug�r slowly - �bout 2 t�blespoons �t � time - until it's fully incorpor�ted.
- Incre�se the speed to high �nd whip until h�rd pe�ks form, �dding the v�nill� �s it whips.
- Using � wire whisk, fold the flour mixture into the whipped egg whites �bout 1/4 cup �t � time, m�king sure to fold very gently �nd slowly, so �s not to defl�te the egg whites. This is � critic�l step, so t�ke c�re �nd t�ke your time.
- Pour the b�tter slowly into �n un-gre�sed 10-inch �ngel Food C�ke or Tube P�n �nd smooth out the top c�refully.
- B�ke for 35-40 minutes �t 325 degrees F�hrenheit, or until the top of the c�ke is golden brown �nd the c�ke springs b�ck when you touch it gently.
- Invert the c�ke to cool (turn it upside down) on � gl�ss to promote �ir flow. Cooling the c�ke upside down with lots of �irflow will ensure th�t it doesn't f�ll �s it cools �nd th�t it m�int�ins its gr�nd height.
- Let the c�ke cool completely to room temper�ture (I let it cool for �t le�st �n hour) before slicing �nd serving with fresh berries (or your f�vourite fruit s�uce) �nd whipped cre�m.
