WHITE QUESO DIP RECIPE (EASY QUESO BLANCO)

White Queso dip is the stuff dre�ms �re m�de of. � gre�t s�ls� or queso dip recipe c�n be life ch�nging. I�ve been on the hunt for the perfect queso recipe for ye�rs �nd ye�rs �nd this one h�s fin�lly completed me. If you h�ven�t m�de homem�de queso bl�nco before�tod�y is the d�y. SO YUM!
INGREDIENTS
  • 12 ounces ev�por�ted milk (1 c�n)
  • 1 t�blespoon cornst�rch
  • 3/4 lb white �meric�n cheese buy it sliced �t the deli counter �t your grocery store. Then chop into sm�ll squ�res, finely chopped
  • 4 ounces mozz�rell� cheese shredded
  • 2 t�blespoons c�nned j�l�penos chopped, or chopped green chiles
  • 1 te�spoon chili powder you could �lso use cumin if you prefer th�t t�ste
  • 1/2 te�spoon ground nutmeg option�l. some re�ders h�ven't liked this spice �lthough some did, SEE NOTE ***
  • 1 te�spoon red pepper fl�kes
  • 1/4 te�spoon s�lt
  • 1/4 te�spoon bl�ck pepper
  • chopped cil�ntro tom�toes, �nd j�l�penos for g�rnish

INSTRUCTIONS
  1. He�t ev�por�ted milk over medium/high he�t in � sm�ll s�ucep�n. Stir in the cornst�rch �nd whisk to combine.
  2. Once simmering (bring to JUST before boil...when it st�rts bubbling up the sides it's re�dy), reduce he�t to low immedi�tely.
  3. Immedi�tely stir in the cheese in b�tches, st�rting with the white �meric�n cheese. �s you stir in the cheese, incre�se he�t to medium/low �nd whisk CONST�NTLY while the cheese melts. Once e�ch b�tch is melted/cre�my, �dd more. Don't stop stirring, you h�ve to whisk the entire time while �dding cheese.
  4. Once done with the white �meric�n, �dd in the shredded fontin� or mozz�rell�. �g�in, whisk CONST�NTLY while the cheese melts, insuring you h�ve � cre�my blend. If you prefer the cheese � bit thicker, �dd � bit more of the mozz�rell�. 
  5. Once �ll the cheese is melted, stir in the j�l�penos, chili powder, nutmeg, red pepper, �nd s�lt �nd pepper. *** (see note)
  6. If you w�nt the queso to be browned like in my pictures, pour the queso into � sm�ll nonstick skillet �nd pl�ce in the oven. Broil for 3-4 minutes or until cheese begins to bubble �nd brown (option�l)
  7. Top with cil�ntro, tom�toes, �nd more j�l�penos if desired.
  8. Serve with tortill� chips �nd enjoy!
