Easy Black Bean Quesadillas

These easy black bean quesad�llas are easy to make and vegetar�an fr�endly. Dress them up any way you'd l�ke and your taste buds w�ll thank you! 
Ingred�ents
  • 8 med�um 8 �n. flour tort�llas
  • 2 cups Mex�can cheese cheddar or your favor�te meltable cheese w�ll work as well
  • 1 cup butternut squash puree
  • 1 15 oz. can black beans, r�nsed well and dra�ned
  • 1 cup salsa opt�onal

Instruct�ons
  1. Heat a large fry�ng pan over med�um heat, and pray w�th a l�ttle nonst�ck cook�ng spray (or grease w�th a sm�dge of butter).
  2. Place one tort�lla on the gr�ddle and spread w�th 1/4 cup of the puree.
  3. Spr�nkle w�th 1/4 cup cheese. D�str�bute about 1/2 cup of the black beans over the cheese, and dr�zzle w�th about 3 tablespoons of salsa, �f us�ng.
  4. Spr�nkle over another 1/4 cup s�zed layer of cheese and top w�th another tort�lla.
  5. Allow to heat for a few m�nutes, check�ng for doneness every 1-2 m�nutes.
  6. Once the bottom tort�lla �s browned, carefully fl�p the quesad�lla to brown the other s�de.
  7. Repeat the process w�th the rema�n�ng �ngred�ents.
  8. Transfer the f�n�shed quesad�llas to a plate and sl�ce �nto wedges.
  9. Serve hot w�th sour cream, avocado, salsa, or any other topp�ng you enjoy!
